Hummus Breakfast Toast
A perfect vegan, mediterranean breakfast: Whole grain toast topped with hummus, red pepper strips and a sprinkle of pine nuts
Tahini and red peppers are a perfect combination. Hummus, a traditional dip/spread made with tahini (sesame paste) and chickpeas, is the perfect high protein topping you need for a savory breakfast.
This breakfast is a great source of protein, fiber and vitamins thanks to it’s ingredients. The addition of pine nuts adds that extra crunch and more antioxidants.
If you don’t have hummus on hand, I suggest you use tahini. Just mix it with a teaspoon of water and a bit of lemon juice and spread it on your bread.
Hummus Breakfast Toast
Ingredients
- ½ tsp Extra virgin olive oil
- 1 small red bell pepper, sliced
- 1 large slice whole grain bread
- 1 tbsp hummus
- 1 tsp pine nuts
Instructions
- Heat olive oil in small pan, once hot saute peppers for 2-3 minutes.
- Toast bread, spread hummus, top with peppers and sprinkle pine nuts.
Never thought hummus would be used as breakfast, but here we are, loved it!
This was really easy to make. I used jarred red peppers. I’m trying to cut out sugar and this was perfect for breakfast.
I like. It is filling.,Leaving me 7o% full…just right.
