- Heat 1 teaspoon of olive oil in a pan and sauté finely chopped onion for about 5 minutes, until it’s soft and golden. Add the frozen spinach, along with a pinch of salt, ½ teaspoon of dill, and ½ teaspoon of oregano. Sauté until the spinach is fully defrosted and heated through and no water is left, then set aside to cool.
- Crumble the feta cheese with a fork on a plate. Once the spinach mixture has cooled slightly (about 5 minutes), chop it finely and combine it with the feta. Mix well until all the ingredients are fully incorporated.

Ingredients

- 3 tablespoons + 1 tsp Extra virgin olive oil
- 6 oz (180 g) frozen spinach
- 1 teaspoon dry dill (divided)
- 1 teaspoon dry oregano (divided)
- a pinch of salt
- 1 tablespoon tomato paste
- Freshly ground pepper
- 2 ounces (60 g) feta cheese
- ½ baguette
Instructions
- Preheat the oven at 425°F (220°C)
- In a small bowl, mix 3 tablespoons olive oil, 1–2 tablespoons tomato paste, ½ tsp oregano, ½ tsp dill, a pinch of salt, and pepper. Stir until smooth and set aside.
- Heat 1 teaspoon olive oil in a pan. Sauté finely chopped onion for 5 minutes until soft. Add frozen spinach, Add a pinch of salt and ½ teaspoon of dill and ½ tsp oregano and sauté until defrosted and heated and no water is left. Set aside.
- Crumble feta with a fork on a plate. Once spinach cools (about 5 minutes), chop it and add the feta. Mix well.
